Pizza on the BBQ! This is barbequing at its most fun. This recipe can also be made in the oven inside so whatever the weather you won't miss out on these delicious flavours.

Barbeque Lamb Pizza

Serves 4

Recipe of the week

Ingredients

  • 3 Tbsp oil
  • 2 Tbsp Gourmet Garden Basil
  • 1 tsp Gourmet Garden Garlic
  • 300g lean lamb leg steaks, finely sliced
  • 2 courgettes, thickly sliced lengthwise
  • 1 capsicum, finely sliced
  • 2 medium-sized pizza bases
  • 1/2 cup Wattie's Tomato Puree
  • 100g feta cheese, crumbled

Method

1. Mix together oil, Gourmet Garden Basil and Gourmet Garden Garlic in a small bowl to make herb oil.

2. Drizzle 2 tsp herb oil over sliced lamb toss to coat. Brush vegetables with herb oil keeping back a teaspoon for the pizza bases.

3. Preheat the BBQ plate to medium-high heat, cook the lamb and vegetables until golden and just tender. Set aside and keep warm.

4. Brush one side of each pizza with herb oil and place oil-side down on a moderately hot BBQ plate for 3 minutes or until the base is beginning to brown. Brush the top of the pizza base with remaining herb oil and turn over.

5. Spread pizzas with tomato puree. Scatter over warm lamb and vegetables, top with feta cheese.

6. Cover with the BBQ hood and cook over low - moderate heat for 5 minutes or until the base is crispy and topping hot. Serve immediately with mixed green salad leaves.

Hint: As BBQs do vary in heat, check halfway through cooking. If cooking this in the oven, bake for 10-12 minutes in an oven preheated to 220°C.
