Ann's Pavlova
3 Tablespoons cold water
4 Egg Whites
1 Cup Sugar
1 tsp Vinegar
1 tbsp Corn Flour
1 tsp Vanilla Essence (or other flavours) (Optional)
Method:
Beat egg whites and water until you have stiff peaks (couple of minutes in electric mixer)
Add the sugar gradually, then the vinegar and cornflour.
Beat again for a quick minute, making sure all is combined.
Add Essence or other flavours
Cook for 20 minutes at 300 degrees and leave in oven (UNTOUCHED) until cool.
Tips:
Adding a strawberry essence and pink colour gives you a strawberry pavlova.
Sambucca concentrate works well with this recipe too.
Fish Cakes
1/2 lb Smoked Fish
3/4 lb Potatoes, Mashed (seasoned to taste)
salt
1 Egg
Parsley
1 cup breadcrumbs (fine)
Method:
Mix all ingredients together and coat with breadcrumbs
Shallow fry until golden brown all over.
Tips:
Pork Chow Mein
- 1 pkt Chicken Noodle Soup
- 1 cup Water
- 2 tbsp Soy Sauce (Light)
- 500g Pork pieces
- 3 tbsp canola Oil
- 1 onion, cut into wedges
- 1/2 cup frozen beans
- 1/4 Cabbage, sliced thinly
Method:
Combine Chicken soup, 1/4 water, soy sauce, and Sherry
- Add pork pieces and marinate for one hour.
- Heat oil in pan or wok, add the Pork
- Toss meat over high heat until browned, add onion and toss for further 2 minutes
- Add rest of water, pouring over the pork. Simmer for 10 minutes
- Add veges and cook for further 5 minutes.
Tips:
- This recipe can be done with chicken, beef, lamb, venison etc, just replace the pork pieces.

Barbeque Lamb PizzaServes 4
Ingredients
Method 1. Mix together oil, Gourmet Garden Basil and Gourmet Garden Garlic in a small bowl to make herb oil. 2. Drizzle 2 tsp herb oil over sliced lamb toss to coat. Brush vegetables with herb oil keeping back a teaspoon for the pizza bases. 3. Preheat the BBQ plate to medium-high heat, cook the lamb and vegetables until golden and just tender. Set aside and keep warm. 4. Brush one side of each pizza with herb oil and place oil-side down on a moderately hot BBQ plate for 3 minutes or until the base is beginning to brown. Brush the top of the pizza base with remaining herb oil and turn over. 5. Spread pizzas with tomato puree. Scatter over warm lamb and vegetables, top with feta cheese. 6. Cover with the BBQ hood and cook over low - moderate heat for 5 minutes or until the base is crispy and topping hot. Serve immediately with mixed green salad leaves. Hint: As BBQs do vary in heat, check halfway through cooking. If cooking this in the oven, bake for 10-12 minutes in an oven preheated to 220°C. Mince Porcupines
Ingredients:
- 500g Mince (Premium, Beef, Pork, Chicken, Casserole Mince)
- One onion, shopped
- 1 tsb Mixed Herbs
- 1/2 c Rice
- Tin condensed soup (eg tomato)
- Salt [to taste]
- Form the Mince, Onion, herbs, salt [to taste] and Rice into small balls.
- Place into the casserole dish.
- Pour soup over the balls.
- Cook in oven for 30 minutes at 180c
Tips:
- Choosing different soups make for various flavours in the final product.
- You can add different herbs or extras for extra flavour.
- For a bit of spice at Sweet chilli Sauce
- Use the casserole mince tin to make this meal a vegetarian version.
Orange Scented Hoki in Creamy Wine Sauce
Ingredients:
- 525g bag Sealord Simply Natural Hoki Fillets
- 1 Tblsp chopped fresh parsley
- grated rind of one orange
- 4 tsp oil
- 300g dried fettucini pasta
- 1 leek, trimmed, washed and sliced
- 600g pouch The Good Taste Company Smoked Fish and White Wine Chowder
- 1 Tblsp chopped fresh chives
- Place the frozen Sealord Simply Natural Hoki Fillets on a baking paper lined grill tray. Combine parsley, orange rind, 2 tsp oil, season with salt and pepper, spread evenly onto Hoki fillets.
- Cook under a fan grill at 200°C for 15 minutes or until cooked.
- Cook the fettucine in boiling salted water for 12 minutes or until tender, drain well.
- Heat the remaining oil in a deep non-stick pan, gently fry the leek until tender, but not brown. Pour over The Good Taste Company Smoked Fish and White Wine Chowder, bring almost to the boil.
- Serve the hot drained fettucine smothered in creamy vegetable sauce and topped with grilled hoki fillets, garnish with chives and serve immediately with vegetables.
